Prawn Wonton Chips
Crispy and crunchy with tender chunks of flavoured prawns in the centre, these are a delicious addition to any celebration.

What do I need?
- 700 g green prawns, peeled and deveined
- ½ cup spring onion, sliced
- 2 egg whites
- 4 tsp soy sauce
- 2 tsp cornflour
- 2 cloves garlic, minced
- 2 tsp minced ginger
- 1 tsp salt
- ½ tsp cayenne pepper
- 48 square wonton wrappers
- 2 eggs, lightly beaten
- Vegetable oil for frying
How do I make it?
- Add prawns to a food processor and pulse until finely chopped. Transfer to a bowl and add spring onion, egg whites, soy sauce, cornflour, garlic, ginger, salt, and cayenne pepper and mix well.
- Brush both sides of wonton wrappers with beaten egg. Place a small spoonful of prawn mixture in the middle of each wonton wrapper.
- Add about 3-centimetres of vegetable oil to a high-sided frying pan and heat to 180C.
- Cook, prawn side up, in batches so as not to overcrowd the pan. When the bottom is golden, flip to cook the other side. Transfer to a plate lined with paper towel.
