What’s the serving size?

Makes 48

What do I need?

  • 700 g green prawns, peeled and deveined
  • ½ cup spring onion, sliced
  • 2 egg whites
  • 4 tsp soy sauce
  • 2 tsp cornflour
  • 2 cloves garlic, minced
  • 2 tsp minced ginger
  • 1 tsp salt
  • ½ tsp cayenne pepper
  • 48 square wonton wrappers
  • 2 eggs, lightly beaten
  • Vegetable oil for frying

How do I make it?

  1. Add prawns to a food processor and pulse until finely chopped. Transfer to a bowl and add spring onion, egg whites, soy sauce, cornflour, garlic, ginger, salt, and cayenne pepper and mix well.
  2. Brush both sides of wonton wrappers with beaten egg. Place a small spoonful of prawn mixture in the middle of each wonton wrapper.
  3. Add about 3-centimetres of vegetable oil to a high-sided frying pan and heat to 180C.
  4. Cook, prawn side up, in batches so as not to overcrowd the pan. When the bottom is golden, flip to cook the other side. Transfer to a plate lined with paper towel.
