Mini Fruit Mince Pies
These bite-sized fruit mince pies are an excellent addition to festive parties, or box them up and give as gifts to friends and family.

What do I need?
- 350 g plain flour, plus extra for dusting
- 175 g chilled butter, cut into 1-centimetre cubes
- 8 tbsp cold water
- 250 g fruit mince
- 30 mL milk
How do I make it?
- Preheat oven to 220C.
- Grease 2 x 12-hole cupcake trays.
- Sieve flour into a bowl and add cubed butter. Use your fingers to rub the butter into the flour until it resembles breadcrumbs.
- Add a tablespoon of cold water and stir into the mixture. Continue adding water, one tablespoon at a time, until the mixture just comes together. Use your hands to work the pastry into a ball.
- Turn pastry out onto a lightly floured surface and roll out to 2-millimetre thickness. Use a circle-shaped cutter to cut out 24 circles from the pastry and place them in the prepared cupcake trays.
- Add 1 teaspoon of fruit mince to each circle of pastry.
- Take remaining pastry and work it back into a ball and roll out again. Cut out 24 stars using a star-shaped cutter. Place a star on top of the fruit mince and press down slightly so that it sticks.
- Use a pastry brush to brush a little milk over the top of the stars, then cook in oven for 15-20 minutes or until the pastry is golden brown.
- Remove from oven and set aside to cool.
TOP TIPS
- You will need a circle-shaped cutter and a star-shaped cutter for this recipe.
- If desired, you can dust cooled mince pies with icing sugar before serving.
- The pastry can be made in a food processor by pulsing the flour and butter until it resembles breadcrumbs, and then adding water gradually.
