Barbecued Corn with Thai Herb Butter

Fire up the barbecue for a twist on classic barbecued corn. Sweet, smoky kernels get a mouthwatering upgrade with Thai Herb Butter flavoured with Thai basil, coriander, ginger and a hint of chilli for a balance of heat and freshness.

What do I need?

  • ½ cup unsalted butter, softened
  • ¼ cup Thai basil, chopped
  • ¼ cup coriander, chopped
  • 1 tbsp freshly grated ginger
  • 1 red chilli, deseeded, finely chopped
  • 1 tsp finely grated lime zest
  • Pinch of salt
  • 6 corn cobs

How do I make it?

  1. Heat barbecue grill to medium high heat.
  2. Add butter, basil, coriander, ginger, red chilli, lime zest, and salt to a food processor and blitz to combine. Set aside.
  3. Peel back the husks and remove the silk from the corn, then return the husks so that they are covering the corn.
  4. Grill corn on the barbecue for 10 – 15 minutes, or until the husks are charred and the corn is tender.
  5. Remove corn from the barbecue and carefully peel back the husks.
  6. Spread corn with the butter mixture and serve hot.
