Caramel Coated Popcorn
Whether you're hosting a movie night, celebrating a special occasion, or just craving a delicious snack, this easy-to-make treat will have everyone coming back for more. We popped our own popcorn but you could also use store-bought or microwave popcorn to save time.

What do I need?
For the Popcorn
- ¼ cup vegetable oil
- ¾ cup popping corn
For the Caramel
- 100 g unsalted butter
- 1 cup brown sugar
- ½ cup glucose
- ½ tsp salt
- 1 tsp vanilla extract
- ½ tsp bicarbonate of soda
How do I make it?
- Line 2 baking trays with baking paper.
- Heat vegetable oil in a large saucepan over medium heat.
- Add popcorn and cover with a lid. Listen and when the popcorn starts to pop give the saucepan a good shake.
- Remove saucepan from the heat when the popping stops and transfer popcorn to a large bowl or bowls.
- To make the caramel, add butter to a saucepan over medium heat. Add brown sugar, glucose, and salt and stir. Allow the mixture to simmer for 4 minutes without stirring, then remove from heat and stir in vanilla and bicarbonate of soda.
- Pour caramel over popcorn, then toss the popcorn and transfer to lined baking trays. Set aside to cool and harden. When hard break into pieces and serve.
