Corn Fritters

These crisp golden Corn Fritters are great for a snack or as a side dish and are an excellent option to serve when entertaining.

What do I need?

  • 3 eggs
  • 150 g plain flour
  • 75 g rice flour
  • 1 ½ tsp salt
  • 1 tsp freshly ground black pepper
  • 300 mL chilled water
  • 2 ¼ cups corn kernels (fresh or canned)
  • 2 shallots, finely diced
  • 3 cloves garlic, minced
  • 1 stick celery, finely sliced
  • 2 spring onions, finely sliced
  • ½ cup vegetable oil for frying

How do I make it?

  1. Add eggs, plain flour, rice flour, salt, pepper, and chilled water to a large mixing bowl and stir to form a batter. Add corn, shallots, garlic, celery, and spring onions to the batter and fold through until incorporated.
  2. Heat vegetable oil in a large frying pan over high heat. When oil is hot, spoon the batter in to the oil and fry for 2 minutes, then flip and continue cooking for a further 2-3 minutes or until golden brown on both sides.
  3. Remove fritters from oil and drain on paper towel.
  4. Serve fritters with sweet chilli sauce, sour cream, or drizzled with honey.
