
Corn Fritters
These crisp golden Corn Fritters are great for a snack or as a side dish and are an excellent option to serve when entertaining.

Makes 36 fritters
What do I need?
- 3 eggs
- 150 g plain flour
- 75 g rice flour
- 1 ½ tsp salt
- 1 tsp freshly ground black pepper
- 300 mL chilled water
- 2 ¼ cups corn kernels (fresh or canned)
- 2 shallots, finely diced
- 3 cloves garlic, minced
- 1 stick celery, finely sliced
- 2 spring onions, finely sliced
- ½ cup vegetable oil for frying
How do I make it?
- Add eggs, plain flour, rice flour, salt, pepper, and chilled water to a large mixing bowl and stir to form a batter. Add corn, shallots, garlic, celery, and spring onions to the batter and fold through until incorporated.
- Heat vegetable oil in a large frying pan over high heat. When oil is hot, spoon the batter in to the oil and fry for 2 minutes, then flip and continue cooking for a further 2-3 minutes or until golden brown on both sides.
- Remove fritters from oil and drain on paper towel.
- Serve fritters with sweet chilli sauce, sour cream, or drizzled with honey.
