Queso Fundido with Chorizo

Queso Fundido is a classic Mexican hot dip featuring gooey, melted cheese. Thoroughly decadent and delicious, it’s a great as an appetiser or to serve at a party.

What do I need?

  • 150 g chorizo
  • ½ brown onion, finely diced
  • 1 red chilli, finely diced
  • 2 cloves garlic, minced
  • 2 ½ cups grated Monterey Jack Jalapeno, or grated mozzarella
  • Tortilla chips, to serve

How do I make it?

  1. Preheat oven to 180C.
  2. Cut casing from chorizo and add to an oven-safe frying pan over medium heat. Break the chorizo into small pieces while it cooks. Cook until it is well browned, about 5 minutes, then remove from the pan and drain on paper towel.
  3. Wipe most of the oil from the chorizo from the pan, leaving a small amount to cook the onion, chilli, and garlic. Add onion, and chilli, to the pan and cook, stirring often, for 5 minutes. Add garlic and cook for a further 1 minute.
  4. Remove frying pan from the heat and add half the grated cheese on top of the garlic, chilli, and onion. Top with chorizo and finish with the remaining grated cheese.
  5. Bake in the oven for 10 minutes, or until the cheese is fully melted and bubbling.
  6. Serve hot with tortilla chips for dipping.
