
Queso Fundido with Chorizo
Queso Fundido is a classic Mexican hot dip featuring gooey, melted cheese. Thoroughly decadent and delicious, it’s a great as an appetiser or to serve at a party.

What do I need?
- 150 g chorizo
- ½ brown onion, finely diced
- 1 red chilli, finely diced
- 2 cloves garlic, minced
- 2 ½ cups grated Monterey Jack Jalapeno, or grated mozzarella
- Tortilla chips, to serve
How do I make it?
- Preheat oven to 180C.
- Cut casing from chorizo and add to an oven-safe frying pan over medium heat. Break the chorizo into small pieces while it cooks. Cook until it is well browned, about 5 minutes, then remove from the pan and drain on paper towel.
- Wipe most of the oil from the chorizo from the pan, leaving a small amount to cook the onion, chilli, and garlic. Add onion, and chilli, to the pan and cook, stirring often, for 5 minutes. Add garlic and cook for a further 1 minute.
- Remove frying pan from the heat and add half the grated cheese on top of the garlic, chilli, and onion. Top with chorizo and finish with the remaining grated cheese.
- Bake in the oven for 10 minutes, or until the cheese is fully melted and bubbling.
- Serve hot with tortilla chips for dipping.
