Tuna and Sweet Potato Patties
Ideal for a mid-week meal, these tasty patties are a breeze to make. You will need to chill the mixture before shaping into patties as this will help them hold their shape. We recommend making them the day before so they’re ready to cook when it’s dinner time.

What do I need?
- 500 g sweet potato, peeled and cut into small pieces
- 20 g unsalted butter
- 100 g parmesan cheese, grated
- 425 g can tuna in springwater, drained
- 2 eggs
- 50 g breadcrumbs
- Pinch of salt
- Pinch of freshly ground black pepper
- Vegetable oil, to fry
How do I make it?
- Add sweet potato to a saucepan and cover with cold water. Bring to the boil and cook for 10 minutes, or until tender. Drain, then add butter and mash. Set aside to cool slightly.
- Add mashed sweet potato to a large bowl, then add parmesan, tuna, eggs, breadcrumbs, salt, and pepper and mix to combine.
- Transfer mixture to the fridge for 45 minutes.
- Shape mixture into patties (this recipe makes about 12 patties) of equal size. When you have formed the patties, press lightly to flatten them.
- Heat vegetable oil in a frying pan over medium-high heat.
- Cook patties in batches for 3-4 minutes per side or until golden and cooked through.
