Linguine with Broccolini, Chickpeas and Lemony Ricotta

A fresh, zesty and creamy vegetarian pasta that’s Ideal for a mid-week meal as it only takes 30 minutes to prepare.

What do I need?

  • 500 g linguine
  • 2 bunches broccolini
  • 400 g can chickpeas, drained and rinsed
  • 3 cloves garlic, smashed
  • 1/3 cup olive oil
  • 2 lemons
  • Salt
  • Freshly ground black pepper
  • 3 tbsp unsalted butter
  • 300 g ricotta
  • Chilli flakes, if desired

How do I make it?

  1. Cook linguine according to packet instructions until al dente. Drain and reserve ¾ cup of the pasta water.
  2. While linguine is cooking, add broccolini, chickpeas, and garlic to a baking tray. Zest the lemons and set the zest aside. Cut lemons in half and add to the baking tray. Pour over olive oil and toss ingredients to coat. Season with salt and pepper and grill for 5 minutes, then stir and return to the grill for a further 5 minutes. Remove from oven and discard garlic.
  3. Add reserved pasta water to a large frying pan over medium heat. Add linguine, lemon zest, butter, and ricotta and toss.
  4. Arrange pasta on plates, add broccolini, chickpeas, and lemons and sprinkle with chilli flakes if desired.
