Fast Beef Pho

A tasty and warming Vietnamese-inspired beef pho that will be ready in just 30 minutes. Ideal for keeping you warm and toasty as the cooler weather sets in.

What do I need?

  • 350g steak (choose a good quality cut)
  • 2 onions, quartered
  • 7cm piece ginger, peeled
  • 3 star anise
  • 1 cinnamon stick
  • 1½ tsp coriander seeds
  • 7 whole cloves
  • 1.3 litres beef stock
  • 200ml warm water
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 300g fresh noodles
  • 2 red chillies, finely sliced
  • 3 spring onions, trimmed and finely sliced
  • 30g coriander leaves, roughly chopped
  • 1 lime, cut into wedges

How do I make it?

  1. Put steak in freezer while you prepare the broth. This will make it easier for you to cut very  thin slices later.
  2. In a large saucepan over high heat, add onions and ginger to the dry pan. Cook until onions and ginger are charred all over and then add the star anise, cinnamon, coriander seeds and cloves and cook, stirring constantly for 1 minute. Add beef stock and water and bring to the boil. Reduce heat and simmer for 20 minutes.
  3. Remove steak from freezer and slice it into thin strips. Try to get it as thin as you can. Add the steak to the broth and simmer for 1 minute, then remove the broth from the heat and add fish and soy sauces. Stir.
  4. Place noodles into bowls and strain the broth into a large pan. Remove steak from strainer and set aside. Discard onion, ginger and spices. Pour strained broth over the noodles. Top each bowl with beef, spring onions, chilli and coriander and serve with lime wedges.
