It’s a humble chicken cut that is often underestimated for its ability to provide a flavourful meal so we think it’s time you revisit the chicken breast as a dinner option and we’ve got five ideas that’ll have you cooking up a finger lickin’ feast.

Monday: Crispy Simplicity

Flatten out a chicken breast with a meat tenderiser, coat with parmesan and breadcrumbs and cook in a hot pan. Serve with a crisp salad for a quick, easy and tasty dinner.

Tuesday: (Not) Taco Tuesday

Cut chicken breasts into 5cm strips and marinate in a bowl with garlic, lime juice, chili and cumin for 20 minutes. Cook on an oven tray with onion, capsicum, tomatoes and chilies and then wrap in tortillas and serve with salsa and Greek yoghurt or sour cream.

Wednesday: Oodles of noodles

Thursday: Stuffed chook

Halve chicken breasts horizontally, keeping one side attached and stuff with prosciutto, basil and cheese. Roll up chicken, tie with kitchen twine and brown in a heavy ovenproof pan before placing in the oven to cook through.

Friday: Take-away treat

Treat yourself to a Chinese take-away … at home. Whip up a quick and easy Kung Pao Chicken and sit back and relax at the end of a long week.
