Two hot tips when using chillies … kitchen helper
Chilis are hot because they contain a compound called capsaicin. If too much ends up in your dish or on your hands (and then in your eyes!) things can get a little uncomfortable. Here are two tips to stop that happening.
1. If you want to make your chillies milder you need to remove the seeds, which is usually done by slicing the chilli out and scraping out the seeds with a knife. A quicker and cleaner method is to loosen the seeds first. Roll a whole chilli between your palms several times. You can then cut off the top of the chilli and tap out the seeds into the bin. If you want to reduce the heat further, split the chili in half and remove the membrane which held the seeds.
2. Once you have cut a chilli, your hands will have capsaicin on them which washing with water doesn’t fully remove. Then you touch your eye and …ouch. Simply squeeze a lemon and rub the juice on your hands. This will neutralise the capsaicin and you can now go ahead and wash your hands with soap and water as normal.
