Bananas are almost the perfect fruit; they come in their own gorgeous yellow packaging, they’re a great portable snack and they are an excellent ingredient in many recipes both sweet and savoury. But there’s one thing about them that is super-frustrating and that is that they can go from being perfect one day to overripe the next. But there is a clever way to stop this happening.

Bananas release ethylene, a gas which controls ripening. Most of the ethylene is released from the stems of the bananas, so if you want to slow down ripening, simply wrap the stems in foil or clingfilm. Problem solved!
