How to make your own baking powder … kitchen helper

You’re mid-cook and your recipe calls for baking powder. Your container in the pantry is … empty.  What do you do? You make your own – here’s how.

The commercial baking powder you buy is actually a mixture of bicarbonate of soda, cream of tartar and cornflour.  So if you have run out of baking powder, and you have these ingredients in your pantry, you can make your own.

For one teaspoon of baking powder:

  • Combine ¼ teaspoon bicarbonate of soda with ½ teaspoon of cream of tartar and ¼ teaspoon of cornflour.

If you don’t have these ingredients on hand you can:

  • Use lemon juice or vinegar, and bicarbonate of soda. Substitute one teaspoon of baking powder for ¼ teaspoon bicarbonate of soda and ½ teaspoon of lemon juice or white vinegar.  The acid reacts with the bicarb to produce the rising action of baking powder.
