How to freeze lemon wedges … kitchen helper

If you find yourself with too many lemons, you can cut them into wedges and freeze them. 

These are great to pop into drinks instead of ice cubes, with the added benefit of not diluting your drink as they melt, and giving your drink a refreshing, lemony zing. And they look nice, too!

Here’s the best way to go about it:

1.   Slice your lemons into wedges – depending on the size of your lemons, either into quarters or eighths.

2.   Place the lemons in a single layer on a sheet on baking paper on a baking tray, and place in the freezer for several hours until frozen.  This step is important as it will prevent them from freezing together in a block.

3.   Once frozen, tip the wedges into a Ziploc bag, squeeze as much air out as possible and seal.

If you like, you can cut your lemons into thin round slices and do the same – but be aware that this will take a little more freezer space when freezing them on trays.
