How to cut bacon into lardons … kitchen helper

Lardons are bacon that has been cut into small strips, matchsticks, or cubes. While there are no hard and fast rules about the dimensions of lardons, they generally are around 2 ½ centimetres x ½ centimetre in size.  A classic ingredient in French cooking, lardons bring texture, richness, and a juicy, salty hit to all kinds of dishes from coq au vin to salads. And while they are a wonderful ingredient to include in your cooking, they can be tricky to cut unless you have the knife skills of a trained chef. Luckily, we’ve got a handy hack that will make cutting lardons super-simple.

To make cutting bacon into lardons easy, pop the bacon in the freezer for 15 minutes before cutting. This will firm up the meat making it much easier to cut perfectly sized and shaped lardons to use in your culinary creations.
