With the variety of citrus fruits available to us, do you sometimes wonder which type you should be using in your cooking? When is it best to use limes? Or grapefruit? Mediterranean dishes and flavours like olive oil, fennel and fish suit orange and grapefruit. Limes work well with Asian flavours and are the perfect addition to Mexican cooking where their acidity and bitter flavour is the perfect partner to chilli and coriander. And while it is ideal to use the right type of citrus, if you find yourself without a lime or grapefruit, remember that lemon is a versatile all-rounder that can be used to add flavour to a variety of dishes.
