How to make your potatoes easy-peel
Have you ever struggled to peel a hot potato when making potato salad? Here’s a tip that will make it a breeze. Read on to find out more.
We love our potato salads in Tassie and of course the varieties best for this are the waxy, firm varieties like Pink Eyes or Nicola. Once boiled you need to remove their skins and this is where the trick comes in. If they are very young, small potatoes, their skin will be very thin and almost rubs off once the potatoes are boiled. But for larger potatoes, or to make your job even easier with the small ones, do this:
1. Score a barely skin-deep line around the middle of the potato (imagine drawing an ‘equator’ around the potato with a small sharp knife).
2. Boil them in the usual way.
3. Rinse them in cold water for a few minutes.
The skin will naturally curl at the point where they were cut and lift off very easily with your fingers, without the need to peel them. And wear rubber gloves if they’re still hot to the touch – even after rinsing in cold water potatoes maintain their internal temperature for a while.
