The trick is to not overcrowd the roasting pan. That’s it, pretty simple but super important. If you crowd the pan, cramming in as many vegetables as you can, the air cannot circulate around the vegetables and although your vegetables might taste “fine” they won’t taste “great”. Give them a little room and you’ll be surprised by the difference it makes.
