It is pretty much universally accepted that the best kind of roast veggies are those that are super crispy, almost caramelised on the outside but light and fluffy on the inside. But achieving this is easier said than done … until now. We’ve got a simple tip that will change the way you cook roast veg and give you that desired perfect result. The trick is to not overcrowd the roasting pan. That’s it, pretty simple but super important. If you crowd the pan, cramming in as many vegetables as you can, the air cannot circulate around the vegetables and although your vegetables might taste “fine” they won’t taste “great”. Give them a little room and you’ll be surprised by the difference it makes.
