Producer Profile … Fromagerie Guilloteau
The Fromagerie Guilloteau story started in the early 80s in Rhone Alpes, France, thanks to the creativity of a passionate cheese lover, Jean Claude Guilloteau. It was his invention of a unique approach to cheese making that naturally retained the noblest part of the milk and eventually resulted in a heavenly luscious and velvety soft ripened cheese.
Fromager d'Affinois is a generous double cream cheese that is ripened for up to three weeks with unique lactic ferments developed by Guilloteau. It has a thick white mould rind, and the paste gradually develops a mild, sweet and creamy flavour. Its unique melt-in-the-mouth texture makes it a popular choice for the whole family.
Made with added cream then infused with garlic and fine herbs, the curd is contained by a fine white mould. The exterior is embedded with dried herbs, making for a striking presentation and accentuating the robust flavour within. The silky texture of the cheese distinguishes it from other traditional white rind types.

Excellence cheese ripens for up to three weeks with unique lactic ferments developed by Guilloteau. The smoothness and infinite sweetness of this decadent, triple cream cheese, is due to the extra cream that is added. This milk is collected from dairies in the surrounding countryside and this extra cream gives an elegant, silky-buttery mouth feel that adds to the enjoyment of this cheese.

Fromager d’Affinois Red Chilli Pepper is made with added cream but also infused with red capsicum, red jalapeno chilli and cayenne. All encased in a fine delicate white mould rind, its rich red paste has a spicy finish. The silky texture of the cheese distinguishes it from other traditional white rind types.

Named after the French word for countryside “campagne”, Campagnier is a washed rind cheese with a deep amber colour that comes from annatto, a South American plant. Campagnier ripens with home-made lactic ferments for up to three weeks under this thin orange-tinted rind. The cheese then develops a silky smooth texture with a delicious d’Affinois flavour.

Fromager d'Affinois Bleu features the usual tang and bite of a blue vein cheese balanced by the buttery taste of its triple cream recipe. Combined with the luscious and velvety texture typical of d'Affinois, this cheese is rich and has a sweet blue aftertaste. It is a great introduction to blue vein cheeses. Pair it with a crisp Chardonnay, Riesling or Semillon, with fresh figs, dried muscatels, ripe pears and walnuts.
