How to turn leftover mashed potato into a tasty snack
Dinner is done, everyone is full, but you’ve got a lot of mashed potato leftover. Don’t toss it, turn it into a tasty snack or side dish for tomorrow.
Form cold mashed potato into balls or logs and dip into a beaten egg, then into breadcrumbs and shallow fry or cook in your air-fryer until golden brown for delicious potato croquettes. You can mix in some herbs, a sprinkling of parmesan, or add a tin of tuna or salmon, if you want to add a little extra flavour.
