Flavoured butters … the secret ingredient you need in your kitchen
If you’re looking for a simple and easy way to give dishes a flavour injection, then flavoured butters are the answer. They’re easy to make and you can keep them in the freezer ready to add to chicken, roasts, steaks, fish, seafood, vegetables and pasta for a wonderful flavour hit.
Making flavoured butter couldn’t be simpler; you simple blitz your ingredients in a food processor and place onto a sheet of greaseproof or baking paper. Then shape it into a log, twist the ends and tie with kitchen twine. Pop in the freezer until you want to use it and then slice off the amount you need, rewrap and return to the freezer. You can make flavoured butter using any ingredients you like; here’s a few of our favourites.
Garlic Butter
Peel 2 cloves of garlic and blitz in a food processor with 250 grams of unsalted butter and half a handful of fresh flat-leaf parsley.
Basil and Tomato Butter
Combine 250 grams of butter with 6 tablespoons of freshly grated parmesan, a handful of basil leaves and 2 tablespoons of chopped sundried tomatoes.
Thai Butter
Zest 1 lime and add to 250 grams of butter, along with 4 tablespoons of chopped coriander and a deseeded small red chilli.
Olive Butter
Blitz 250 grams of butter with 8 pitted olives, 2 cloves of garlic and a pinch of salt and black pepper.
Curry Butter
Combine 2 tablespoons of curry powder, a pinch of salt and black pepper with 250 grams of unsalted butter.
