Elegant enough for dessert, yet wholesome enough for breakfast, this Yoghurt with Caramelised Figs, Pistachio & Honey layers thick, creamy Greek yoghurt with warm, golden figs glazed in honey. Finished with crunchy pistachios and a drizzle of sweetness, it’s the perfect way to celebrate fresh figs.

What do I need?
- 1 tbsp unsalted butter
- 2 tbsp honey, plus extra for drizzling
- 1–2 tbsp brown sugar
- 4 fresh figs, halved
- 250 g Greek yoghurt
- 2–3 tbsp pistachios, roughly chopped
- Pinch of sea salt
How do I make it?
- Heat a small frying pan over medium heat.
- Add butter; once melted, stir in honey and brown sugar.
- Place the fig halves cut side down in the pan.
- Cook for 3–5 minutes, or until the cut sides are golden, glossy, and caramelised.
- Remove from heat and let cool slightly. The syrup in the pan will thicken as it cools.
- Spoon yoghurt into two bowls.
- Arrange the warm caramelised figs on top.
- Drizzle the remaining caramel syrup from the pan over the yoghurt.
- Scatter generously with chopped pistachios.
- Finish with a little extra honey and a pinch of salt to enhance the sweetness.
TOP TIPS
- Toast the pistachios lightly for deeper flavour.
- A sprinkle of cinnamon or cardamom works beautifully with figs.
- You can prepare the figs in advance. Caramelised figs keep well in the fridge for 2–3 days; warm gently before serving.
