
Waldorf Apple Stacks
A crisp twist on a classic favourite. Juicy apple slices are topped with a creamy, crunchy salad of chicken, grapes, celery, and walnuts and topped with a zesty yoghurt dressing. Light, refreshing, and full of texture, they’re the perfect bite-sized appetiser for parties or any time you want to impress with minimal effort.

What do I need?
For the Base
- 2 large apples, cored and sliced horizontally into ½-centimetre rounds
- 1 tbsp lemon juice
For the Topping
- 150 g cooked chicken, finely chopped
- 75 g apple, finely chopped
- 75 g celery, finely chopped
- 30 g walnuts, chopped
- 100 g red grapes, divided
- 40 g mayonnaise
- 40 g Greek yoghurt
- 1 tsp lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
- Celery leaves, to serve (optional)
How do I make it?
- Combine chicken, finely chopped apple, celery, and walnuts in a bowl. Cut 75 g of grapes into quarters and add to the chicken mixture. Reserve remaining grapes whole for serving.
- Whisk mayonnaise, yoghurt, and lemon juice together in a small bowl. Taste and season.
- Add the dressing to the chicken mixture and stir to coat evenly. Refrigerate until ready to serve.
- Prepare the apple by brushing both sides of each slice with lemon juice to prevent browning.
- Assemble the Stacks by spooning the Waldorf Salad mixture onto each apple slice.
- Garnish with a grape and fresh celery leaves, then serve.
