Waldorf Apple Stacks

A crisp twist on a classic favourite. Juicy apple slices are topped with a creamy, crunchy salad of chicken, grapes, celery, and walnuts and topped with a zesty yoghurt dressing. Light, refreshing, and full of texture, they’re the perfect bite-sized appetiser for parties or any time you want to impress with minimal effort.

What do I need?

For the Base

  • 2 large apples, cored and sliced horizontally into ½-centimetre rounds
  • 1 tbsp lemon juice

For the Topping

  • 150 g cooked chicken, finely chopped
  • 75 g apple, finely chopped
  • 75 g celery, finely chopped
  • 30 g walnuts, chopped
  • 100 g red grapes, divided
  • 40 g mayonnaise
  • 40 g Greek yoghurt
  • 1 tsp lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Celery leaves, to serve (optional)

How do I make it?

  1. Combine chicken, finely chopped apple, celery, and walnuts in a bowl. Cut 75 g of grapes into quarters and add to the chicken mixture. Reserve remaining grapes whole for serving.
  2. Whisk mayonnaise, yoghurt, and lemon juice together in a small bowl. Taste and season.
  3. Add the dressing to the chicken mixture and stir to coat evenly. Refrigerate until ready to serve.
  4. Prepare the apple by brushing both sides of each slice with lemon juice to prevent browning.
  5. Assemble the Stacks by spooning the Waldorf Salad mixture onto each apple slice.
  6. Garnish with a grape and fresh celery leaves, then serve.
