
Tamari Glazed Carrots
Sweet, savoury, and lightly spiced, these carrots are finished with a hint of chilli, the crunch of toasted walnuts and the freshness of herbs.

What do I need?
- 1 bunch baby carrots, trimmed and scrubbed (leave a little green top for presentation)
- 2 tbsp olive oil
- 2 tbsp tamari
- 1 ½ tbsp honey
- 1 tsp lemon juice
- 1 garlic clove, finely grated
- ½ tsp freshly ground black pepper
To serve
- 1 red chilli, thinly sliced
- 2 tbsp toasted walnuts, chopped
- 2 tbsp fresh herbs (parsley or basil), roughly chopped
How do I make it?
- Preheat oven to 200C.
- Line a baking tray with baking paper.
- Whisk olive oil, tamari, honey, lemon juice, garlic, and black pepper together in a small bowl.
- Lay carrots on the baking tray and drizzle with the glaze, tossing gently to coat evenly.
- Cook for 25-30 minutes, turning once, until tender and gently caramelised.
- Transfer carrots to a serving plate. Scatter with sliced chilli, toasted walnuts and chopped herbs and serve.
TOP TIPS
- You can substitute soy sauce for the tamari if you prefer.
