Spinach Artichoke Dip

Spinach Artichoke Dip is the ultimate crowd-pleaser. A great option for any occasion, but especially as the Autumn weather sets in, this Dip always hits the spot.

What do I need?

  • 400 g artichokes hearts, drained
  • 250 g cream cheese
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 1 clove garlic, minced
  • 80 g parmesan, grated
  • 60 g mozzarella, grated
  • 180 g frozen spinach, thawed and squeezed to drain excess liquid
  • Salt, to taste
  • Freshly ground black pepper to taste

How do I make it?

  1. Preheat oven to 180C.
  2. Lightly spray a 1 litre casserole dish with cooking spray.
  3. Chop artichokes into small pieces and set aside.
  4. Combine cream cheese, sour cream, mayonnaise, garlic, parmesan, and mozzarella in a bowl and stir well. Add artichokes and spinach and fold through the mixture.
  5. Spoon mixture into the casserole dish and bake in the oven for 20 minutes.
  6. Serve warm with tortilla chips or crackers.
