Spicy Glazed Pork Ribs

Sticky, smoky, and irresistibly bold, these Spicy Glazed Pork Ribs are a true crowd-pleaser. What do I need?

  • 2 kg pork ribs
  • 2 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chilli powder, or to taste
  •  1 tsp salt
  • ½ tsp freshly ground black pepper
  • 2 tbsp olive oil

For the Glaze

  • ½ cup honey
  • ¼ cup soy sauce
  • ¼ cup tomato sauce
  • 3 tbsp sriracha
  • 2 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tbsp freshly grated ginger

How do I make it?

  1. Line a large baking tray with foil and place a roasting rack inside.
  2. Pat the ribs dry with paper towel.
  3. In a small bowl, mix the paprika, cumin, garlic powder, onion powder, chilli powder, salt, and pepper. Rub olive oil over the ribs, then coat with the spice mix.
  4. Place ribs on the rack, cover with foil, and roast for 1 ½ to 2 hours until tender.
  5. While ribs are roasting, combine honey, soy sauce, tomato sauce, sriracha, vinegar, garlic, and ginger in a small saucepan. Simmer for 5 – 7 minutes until slightly thickened.
  6. Increase oven temperature to 200C.  Brush the ribs generously with the glaze and return to the oven, uncovered, for 15–20 minutes, basting once or twice, until sticky and caramelised.
  7. Let ribs rest for 10 minutes before slicing into portions. Serve with extra glaze on the side.

TOP TIPS

-          For a smoky flavour, finish the ribs on a hot barbecue grill for a few minutes after glazing.
