
Spicy Glazed Pork Ribs

What do I need?
- 2 kg pork ribs
- 2 tbsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chilli powder, or to taste
- 1 tsp salt
- ½ tsp freshly ground black pepper
- 2 tbsp olive oil
For the Glaze
- ½ cup honey
- ¼ cup soy sauce
- ¼ cup tomato sauce
- 3 tbsp sriracha
- 2 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1 tbsp freshly grated ginger
How do I make it?
- Line a large baking tray with foil and place a roasting rack inside.
- Pat the ribs dry with paper towel.
- In a small bowl, mix the paprika, cumin, garlic powder, onion powder, chilli powder, salt, and pepper. Rub olive oil over the ribs, then coat with the spice mix.
- Place ribs on the rack, cover with foil, and roast for 1 ½ to 2 hours until tender.
- While ribs are roasting, combine honey, soy sauce, tomato sauce, sriracha, vinegar, garlic, and ginger in a small saucepan. Simmer for 5 – 7 minutes until slightly thickened.
- Increase oven temperature to 200C. Brush the ribs generously with the glaze and return to the oven, uncovered, for 15–20 minutes, basting once or twice, until sticky and caramelised.
- Let ribs rest for 10 minutes before slicing into portions. Serve with extra glaze on the side.
TOP TIPS
- For a smoky flavour, finish the ribs on a hot barbecue grill for a few minutes after glazing.
