Rouille is a spicy, garlicky, flavourful mayonnaise-like spread that is the classic accompaniment to bouillabaisse. It is delicious either stirred directly into the bouillabaisse or spread on a toasted baguette.

What do I need?
- 2 medium cloves garlic
- ¼ cup chopped stale bread
- Large pinch cayenne pepper
- 1 large egg yolk
- 1-2 tsp lemon juice
- Sea salt
- ½ cup olive oil
How do I make it?
- Add garlic, bread, cayenne pepper, and egg yolk to a food processor. Blitz to a paste-like consistency. Add lemon juice and salt and blend.
- Slowly drizzle in olive oil while blending until the mixture becomes thick and smooth and has a mayonnaise-like consistency.
TOP TIPS
- If you like things spicy, add a little harissa or extra cayenne.
- Rouille will keep refrigerated in an airtight container for up to 3 days.
