Rouille

Rouille is a spicy, garlicky, flavourful mayonnaise-like spread that is the classic accompaniment to bouillabaisse. It is delicious either stirred directly into the bouillabaisse or spread on a toasted baguette.

What do I need?

  • 2 medium cloves garlic
  • ¼ cup chopped stale bread
  • Large pinch cayenne pepper
  • 1 large egg yolk
  • 1-2 tsp lemon juice
  • Sea salt
  • ½ cup olive oil

How do I make it?

  1. Add garlic, bread, cayenne pepper, and egg yolk to a food processor. Blitz to a paste-like consistency. Add lemon juice and salt and blend.
  2. Slowly drizzle in olive oil while blending until the mixture becomes thick and smooth and has a mayonnaise-like consistency.

TOP TIPS

  • If you like things spicy, add a little harissa or extra cayenne.
  • Rouille will keep refrigerated in an airtight container for up to 3 days.
