Plum Flaugnarde

Blending the best of autumnal fruit and custard into one delicious treat, this rustic French dessert features juicy plums nestled in a rich custardy batter.

What do I need?

  • 1 ½ tsp unsalted butter
  • 500 g plums, pitted and halved
  • 3 eggs
  • 70 g plain flour
  • 70 g caster sugar, divided
  • 60 mL cream
  • Pinch of salt
  • 180 mL full fat milk
  • 1 ½ tbsp brandy
  • ½ tsp vanilla extract

How do I make it?

  1. Preheat oven to 200C.
  2. Butter a fluted pie dish or other ovenproof dish. Arrange plums, cut side up, in the dish.
  3. Combine eggs, flour, 50 g sugar, cream and salt in a bowl, whisking until there are no lumps visible.
  4. Pour in milk, brandy, and vanilla extract and stir well to combine.
  5. Gently pour the mixture over the plums and bake in the oven for 25 minutes.
  6. Remove from oven and set aside to cool for 5 minutes, then sprinkle with reserved 20 g sugar.
  7. Serve warm with ice cream or cream.
