
Pear, Gorgonzola, Honey, and Walnut Mini Quiches
The combination of fresh pears, creamy Gorgonzola, crunchy walnuts and sweet honey is a winner in these mini quiches. They are a great entertaining option as their small size makes them perfect finger food. Alternatively, you could make a larger quiche to share with the family.

What do I need?
- 500 g ready rolled puff pastry sheets
- 2 tbsp walnuts, coarsely chopped
- 2 eggs
- ¾ cup Gorgonzola, crumbled
- ¼ cup milk
- ¼ cup cream
- 2 pears, cored and finely diced
- 1 tsp rosemary leaves, chopped
- 2 tbsp honey
How do I make it?
- Grease a 12-hole muffin tin.
- Preheat oven to 200C.
- Cut circles from the pastry that are big enough to fit the base and sides of the muffin tin.
- Press circles into the muffin tin, the cover with a tea towel and refrigerate while you prepare the filling.
- Add walnuts to a dry frying pan over medium heat. Cook, stirring and keeping a close watch on them for 1 – 2 minutes or until they are fragrant. Remove from heat and set aside to cool.
- Combine eggs, Gorgonzola, milk, and cream in a bowl and stir well. Add diced pea, walnuts, and rosemary leaves and mix well.
- Spoon egg mixture into the muffin tin and bake in the oven for 25 minutes or until the pastry is golden and puffed.
- Remove from oven and drizzle with honey before serving.
