Pear, Gorgonzola, Honey, and Walnut Mini Quiches

The combination of fresh pears, creamy Gorgonzola, crunchy walnuts and sweet honey is a winner in these mini quiches. They are a great entertaining option as their small size makes them perfect finger food. Alternatively, you could make a larger quiche to share with the family.

What do I need?

  • 500 g ready rolled puff pastry sheets
  • 2 tbsp walnuts, coarsely chopped
  • 2 eggs
  • ¾ cup Gorgonzola, crumbled
  • ¼ cup milk
  • ¼ cup cream
  • 2 pears, cored and finely diced
  • 1 tsp rosemary leaves, chopped
  • 2 tbsp honey

How do I make it?

  1. Grease a 12-hole muffin tin.
  2. Preheat oven to 200C.
  3. Cut circles from the pastry that are big enough to fit the base and sides of the muffin tin.
  4. Press circles into the muffin tin, the cover with a tea towel and refrigerate while you prepare the filling.
  5. Add walnuts to a dry frying pan over medium heat. Cook, stirring and keeping a close watch on them for 1 – 2 minutes or until they are fragrant. Remove from heat and set aside to cool.
  6. Combine eggs, Gorgonzola, milk, and cream in a bowl and stir well. Add diced pea, walnuts, and rosemary leaves and mix well.
  7. Spoon egg mixture into the muffin tin and bake in the oven for 25 minutes or until the pastry is golden and puffed.
  8. Remove from oven and drizzle with honey before serving.
