
Peach Mimosas
Homemade peach nectar is the basis of these Mimosas. Their fresh, fruity taste with a hit of bubbles makes them a great drink for summer entertaining.

What do I need?
To make the peach nectar
- 12 ripe peaches
- ½ cup water
- 1 tbsp caster sugar
- 1 tsp lemon juice
For the Mimosas
- 2 cups peach nectar
- 1 cup orange juice
- 750 mL sparkling wine
- Fresh peach slices, to garnish
- Mint leaves, to garnish
How do I make it?
- Make the peach nectar by washing and cutting the peaches in half and removing the stone. Roughly chop peaches and place in a food processor with the water. Blitz until smooth, then strain through a sieve. Add caster sugar and lemon juice to the strained juice and stir to combine.
- Add 2 cups of peach nectar and 1 cup orange juice to a jug and stir to combine. Divide peach and orange mixture among glasses and top with sparkling wine.
- Garnish with peach slices and mint and serve immediately.
