What do I need?
- 2 oranges, peeled and segmented
- 1 grapefruit, peeled and segmented
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- ¼ red onion, finely diced
- ¼ cup fresh mint leaves, roughly chopped
- 2 tbsp olive oil
- 1 tbsp freshly squeezed lemon juice
- Salt, to taste
- Freshly ground black pepper, to taste
How do I make it?
- Segment the oranges and grapefruit.
- Halve the cherry tomatoes.
- Thinly slice ½ the red onion and finely dice ¼ red onion.
- On a large serving platter or bowl, layer the citrus slices, cherry tomatoes, and red onion.
- Scatter fresh mint leaves over the top.
- Make the dressing by whisking together olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing evenly over the salad and gently toss or leave arranged for a more elegant presentation.
- Serve immediately or chill briefly before serving.
