What do I need?

  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ¼ red onion, finely diced
  • ¼ cup fresh mint leaves, roughly chopped
  • 2 tbsp olive oil
  • 1 tbsp freshly squeezed lemon juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

How do I make it?

  1. Segment the oranges and grapefruit.
  2. Halve the cherry tomatoes.
  3. Thinly slice ½ the red onion and finely dice ¼ red onion.
  4. On a large serving platter or bowl, layer the citrus slices, cherry tomatoes, and red onion.
  5. Scatter fresh mint leaves over the top.
  6. Make the dressing by whisking together olive oil, lemon juice, salt, and pepper.
  7. Drizzle the dressing evenly over the salad and gently toss or leave arranged for a more elegant presentation.
  8. Serve immediately or chill briefly before serving.
