
Charred Oysters with Crispy Garlic Crumble

What do I need?
- 4 tbsp olive oil
- 4 cloves garlic, very thinly sliced
- 12 oysters
- 2 tbsp unsalted butter, melted
- 1 tsp lemon juice
- Pinch of salt
- Pinch of freshly ground black pepper
- Micro-herbs, to serve (optional)
- Lemon wedges, to serve
How do I make it?
- Heat olive oil in a small frying pan over medium heat. Add garlic slices and fry until golden and crisp. Remove with a slotted spoon and drain on paper towel. Reserve the oil for brushing the oysters.
- Heat the barbecue or oven grill to high heat.
- Drizzle each oyster with a little melted butter, a few drops of lemon juice, a brush of the reserved garlic oil, and a little salt and pepper. Place under the grill or on the barbecue for 4-5 minutes, or until the oysters are just cooked.
- Top each oyster with crispy fried garlic and micro-herbs if using. Serve immediately with lemon wedges on the side.
