What do I need?
- 1 ½ cups corn kernels
- 125 g blueberries
- 2 stalks celery, finely diced
- 100 g feta, crumbled
- ½ cup basil leaves, torn
For the Dressing
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp maple syrup
- Salt, to taste
- Freshly ground black pepper, to taste
How do I make it?
- In a large bowl combine corn kernels, blueberries, celery, feta, and basil leaves.
- In a small bowl whisk together olive oil, lemon juice, maple syrup, salt and pepper until well combined.
- Pour dressing over salad, toss gently to combine, and serve.
