What do I need?
- 400 g spaghetti
- 250 g streaky bacon, diced
- 2 cloves garlic, crushed
- 500 g Tasmanian scallops
- 300 mL cream
- Zest of 1 lemon
How do I make it?
- Cook pasta according to packet directions.
- Add bacon to a large frying pan over medium-high heat and cook until crispy.
- Add garlic to the frying pan and cook for 30 seconds, until fragrant.
- Add scallops, cooking for 2 minutes per side, then pour in cream.
- Simmer gently for 3-4 minutes, until the sauce lightly coats the back of a spoon.
- Add lemon zest and cooked spaghetti to the pan, then toss or stir to the coat the pasta in cream.
- Serve immediately.
TOP TIPS
- Reserve ½ cup pasta water before draining. If the sauce becomes too thick, add a splash of pasta water to create a silky, restaurant-style finish.
