Spiced Lemon & Thyme Chicken Wings

Smoky spices, caramelised lemon and tender chicken come together in these crowd-pleasing wings. Simple to make and even easier to share, they’re a go-to for laid-back gatherings.

What do I need?

  • 1.5 kg chicken wings
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garlic powder
  • ½ tsp chilli flakes, optional, to taste
  • 1 tsp sea salt
  • ½ tsp cracked black pepper
  • 2 lemons, halved
  • Fresh thyme sprigs, to serve

How do I make it?

  1. Preheat the oven to 220C.
  2. Line a large baking tray with baking paper.
  3. Place chicken wings in a large bowl. Add olive oil, smoked paprika, cumin, coriander, garlic powder, chilli flakes (if using), salt and pepper. Toss well to coat evenly.
  4. Arrange wings in a single layer on the tray, leaving space between them so they roast rather than steam.
  5. Roast for 35–40 minutes, turning halfway, until golden, crisp and cooked through.
  6. In the final 5 minutes, place lemon halves cut-side down on the tray to caramelise slightly.
  7. Transfer wings to a serving platter, squeeze over roasted lemon and scatter with fresh thyme.

TOP TIPS

  • For extra-crispy wings, pat the chicken dry with paper towel before seasoning.
  • These wings also work beautifully on the barbecue — cook over medium heat, turning regularly, until crisp and cooked through.
  • Serve with a simple yoghurt or garlic aioli dip to balance the spices.
  • Any leftovers are great chopped through salads or wraps the next day.
