
Spiced Lemon & Thyme Chicken Wings
Smoky spices, caramelised lemon and tender chicken come together in these crowd-pleasing wings. Simple to make and even easier to share, they’re a go-to for laid-back gatherings.

What do I need?
- 1.5 kg chicken wings
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garlic powder
- ½ tsp chilli flakes, optional, to taste
- 1 tsp sea salt
- ½ tsp cracked black pepper
- 2 lemons, halved
- Fresh thyme sprigs, to serve
How do I make it?
- Preheat the oven to 220C.
- Line a large baking tray with baking paper.
- Place chicken wings in a large bowl. Add olive oil, smoked paprika, cumin, coriander, garlic powder, chilli flakes (if using), salt and pepper. Toss well to coat evenly.
- Arrange wings in a single layer on the tray, leaving space between them so they roast rather than steam.
- Roast for 35–40 minutes, turning halfway, until golden, crisp and cooked through.
- In the final 5 minutes, place lemon halves cut-side down on the tray to caramelise slightly.
- Transfer wings to a serving platter, squeeze over roasted lemon and scatter with fresh thyme.
TOP TIPS
- For extra-crispy wings, pat the chicken dry with paper towel before seasoning.
- These wings also work beautifully on the barbecue — cook over medium heat, turning regularly, until crisp and cooked through.
- Serve with a simple yoghurt or garlic aioli dip to balance the spices.
- Any leftovers are great chopped through salads or wraps the next day.
