
Herb & Garlic Pork Loin Steaks with Golden Cheddar Crust
Juicy pork loin steaks are topped with a layer of garlicky mushrooms and finished with a golden herb and cheddar crust. This simple, hearty dish is perfect for an easy, but tasty dinner.

What do I need?
- 1 tbsp olive oil
- 200 g mushrooms, sliced
- 2 cloves garlic, crushed
- Salt, to taste
- Freshly ground black pepper, to taste
- 4 pork loin steaks
- 1 tsp dried oregano
- 20 g fresh parsley, finely chopped
- 60 g mayonnaise
- 100 g grated cheddar
- 1 tsp Dijon mustard
How do I make it?
- Preheat oven grill to medium-high.
- Add olive oil to a large frying pan over medium-high heat.
- Cook mushrooms first by adding them to the pan and sauteing for 4-5 minutes until softened and lightly golden. Add the garlic in the final minute. Season lightly, transfer to a bowl and set aside.
- Season the pork with salt, pepper and oregano. Cook steaks in the same frying pan for 3-4 minutes per side until nicely browned but not fully cooked through. Remove from pan and place on a baking tray lined with baking paper.
- Mix parsley, mayonnaise, grated cheddar and Dijon in a small bowl.
- Spoon a layer of cooked mushrooms over each pork steak, then spread the cheese mix generously over the top.
- Grill for 5-8 minutes until the topping is golden and bubbling and the pork is cooked through.
- Rest for a few minutes before serving to keep the pork tender and juicy.
TOP TIPS
- Make sure you cook the mushrooms well first to enable them to release and evaporate their moisture so the topping doesn’t become watery.
- Add a splash of white wine to the mushrooms for an extra layer of flavour.
- A sprinkle of Parmesan on top before grilling gives an even deeper golden crust.
