Baked Chicken with Tomatoes, Capsicum & Capers

This rustic one-pan dish features golden, oven-baked chicken nestled in a rich tomato sauce with sweet capsicum, garlic and briny pops of capers. It’s simple, hearty and perfect with crusty bread or over fluffy rice to soak up the sauce.

What do I need?

  • 2 tbsp olive oil
  • 8 chicken pieces, bone-in, skin-on thighs and drumsticks
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 brown onion, finely chopped
  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp chilli flakes, optional
  • 400 g tin crushed tomatoes
  • 2 tbsp tomato paste
  • 125 mL chicken stock
  • 2 tbsp capers, rinsed
  • 1 tbsp red wine vinegar
  • 2 tbsp fresh parsley, chopped, for garnish

How do I make it?

  1. Heat oven to 200C.
  2. Add olive oil to a large ovenproof frying pan over medium heat.
  3. Season chicken with salt and pepper. Brown in batches, skin-side down first, for about 5-6 minutes, until golden. Remove from pan and set aside.
  4. Reduce heat to medium. In the same pan add onion and cook for 3-4 minutes until softened.
  5. Add capsicum and cook until slightly softened, about 5 minutes.
  6. Stir in garlic, smoked paprika, oregano, and chilli flakes. Cook for 1 minute, until fragrant.
  7. Add crushed tomatoes, tomato paste, and chicken stock. Stir well and bring to a simmer.
  8. Stir in capers and red wine vinegar. Taste and adjust seasoning if necessary.
  9. Return chicken to the pan, nestling it into the sauce.
  10. Transfer to the oven and bake uncovered for 35-40 minutes, until chicken is cooked through and sauce is thickened.
  11. Sprinkle with fresh parsley before serving.

TOP TIPS

  • For crispier chicken skin, place the pan under the grill for the last 5 minutes of cooking.
  • This recipe works well made a day ahead as the flavours will develop. Store in the fridge and reheat before serving.
  • Optional extra – A handful of kalamata olives works beautifully in this recipe. You can also toss in extra vegetables such as zucchini or eggplant if desired.
