What do I need?

  • 200 g white chocolate, finely chopped
  • 60 mL cream
  • 1 tbsp unsalted butter
  • ½ tsp vanilla extract
  • 1/3 cup shelled, unsalted pistachios, finely chopped, plus extra for coating
  • Pinch of salt

How do I make it?

  1. Add white chocolate to a heatproof bowl. Set aside.
  2. In a small saucepan heat cream and butter over medium heat until just simmering. Pour hot cream mixture over the chocolate and let sit for 1-2 minutes to melt.
  3. Stir gently until the chocolate is smooth, then add vanilla, chopped pistachios, and a pinch of salt. Let the mixture cool to room temperature, then cover and refrigerate for 1-2 hours or until firm enough to scoop.
  4. Using a teaspoon, portion the mixture and roll into small balls with your hands.
  5. Roll the truffles in chopped pistachios and place on a tray lined with baking paper.
  6. Refrigerate truffles for 30 minutes to set.

  • Lightly dust your hands with icing sugar to reduce stickiness when shaping truffles
  • For a twist, roll truffles in shredded coconut or dip in melted chocolate.
