
Walnut Toffee Wafer Bars
Simple to make and impossible to resist, these Bars are the perfect combination of crunch, sweetness, and richness. Ideal for the sweet tooth, they feature layers of crispy wafer sandwiched between a velvety walnut toffee filling, topped off with a smooth chocolate glaze.

What do I need?
For the Wafer Layers
- 2 packets ice cream wafers
For the Walnut Toffee Filling
- 200 g caster sugar
- 150 g unsalted butter
- 100 mL milk
- 200 g walnuts, finely chopped
- 2 tsp vanilla extract
- Pinch of salt
For the Chocolate Frosting
- 100 g dark chocolate, chopped
- 2 tbsp unsalted butter
How do I make it?
- Make Walnut Toffee Filling by combining sugar, butter, and milk in a saucepan over medium heat. Simmer for 5-7 minutes, stirring constantly, until slightly thickened and golden.
- Remove from heat and stir in chopped walnuts, vanilla, and salt. Set aside to cool slightly, about 5 minutes, before spreading.
- To assemble add one layer of wafers to the base of a 23-centimetre x 33-centimetre sheet pan.
- Spread with a thin, even layer of warm walnut filling. Repeat with remaining wafers and filling, ending with a plain wafer layer on top.
- Cover with baking paper and place another baking tray on top and press lightly. Refrigerate for 2 hours to set.
- Make the Chocolate Frosting by melting the chocolate and butter together in a heatproof bowl in the microwave in 20-second bursts.
- Stir until smooth, then spread the frosting evenly over the top wafer layer.
- Return to the fridge to set for 30 minutes before slicing.
