Gin and Tonic Truffles

Infused with smooth gin and a hint of zesty citrus, these creamy, velvety truffles deliver the iconic refreshing flavour of a classic gin and tonic in every bite.

What do I need?

  • 60 mL tonic water
  • 150 g white chocolate, roughly chopped
  • 140 mL cream
  • 25 g unsalted butter
  • 30 mL gin

For the Coating

  • 200 g white chocolate, roughly chopped
  • Zest of 1 large lemon
  • Zest of 2 limes

How do I make it?

  1. Line a baking tray with baking paper and set aside.
  2. Add tonic water to a small saucepan and bring to the boil over high heat. Continue boiling until the volume has reduced by half. Remove from heat and set aside to cool.
  3. Place white chocolate in a heatproof bowl. Add cream and butter to a saucepan over low heat. Cook until the butter has melted, then pour over the white chocolate and stir until the chocolate melts. Add gin and the tonic water and stir well. Transfer bowl to the fridge and leave to cool for 30 minutes.
  4. Remove mixture from fridge and use your hands to roll into small balls. Place balls in the freezer for 30 minutes.
  5. Meanwhile make the coating by adding white chocolate to a microwave-safe bowl and cooking in 30 second increments until the chocolate has melted. Add finely grated lemon and lime zest to the melted chocolate and stir through.
  6. Remove truffle balls from the freezer and drop each ball into the melted chocolate, turning to coat thoroughly.
  7. Return truffles to the baking tray and refrigerate to set.
