Whipped Feta with Roasted Olives, Garlic & Red Onion

Creamy and tangy, this Whipped Feta with Roasted Olives, Garlic and Red Onion brings Mediterranean vibes to your table. Silky whipped feta forms the perfect base for a rich topping of blistered olives, caramelised red onion and sweet, roasted garlic.

What do I need?

  • 1 small red onion, cut into wedges
  • 1 cup mixed olives
  • 4 cloves garlic, peeled and halved
  • 2 ½ tbsp olive oil, divided
  • 200 g feta
  • 100 g Greek yoghurt
  • 1 tsp lemon juice
  • Freshly ground black pepper, to taste
  • Fresh thyme, to garnish

How do I make it?

  1. Preheat oven to 200C.
  2. Add onion, olives, and garlic to a baking tray and drizzle with 1 tbsp olive oil. Roast for 20 -25 minutes or until tender and gently caramelised.
  3. Meanwhile prepare Whipped Feta by combining feta, Greek yoghurt, lemon juice, remaining 1 ½ tbsp olive oil, and pepper in a food processor. Blend until smooth and creamy, adjusting consistency with more olive oil or lemon juice if required.
  4. Spoon Whipped Feta into a serving bowl. Pile on roasted olives, onion, and garlic and drizzle over juices from the roasting pan.
  5. Garnish with thyme and serve with crusty bread or crostini.

TOP TIPS

  • This can be made ahead. Store the Whipped Feta and the topping separately, then assemble just before serving.
  • Add a bit of heat with roasted chilli or sprinkle with chilli flakes.
