What do I need?
- 1 small red onion, cut into wedges
- 1 cup mixed olives
- 4 cloves garlic, peeled and halved
- 2 ½ tbsp olive oil, divided
- 200 g feta
- 100 g Greek yoghurt
- 1 tsp lemon juice
- Freshly ground black pepper, to taste
- Fresh thyme, to garnish
How do I make it?
- Preheat oven to 200C.
- Add onion, olives, and garlic to a baking tray and drizzle with 1 tbsp olive oil. Roast for 20 -25 minutes or until tender and gently caramelised.
- Meanwhile prepare Whipped Feta by combining feta, Greek yoghurt, lemon juice, remaining 1 ½ tbsp olive oil, and pepper in a food processor. Blend until smooth and creamy, adjusting consistency with more olive oil or lemon juice if required.
- Spoon Whipped Feta into a serving bowl. Pile on roasted olives, onion, and garlic and drizzle over juices from the roasting pan.
- Garnish with thyme and serve with crusty bread or crostini.
TOP TIPS
- This can be made ahead. Store the Whipped Feta and the topping separately, then assemble just before serving.
- Add a bit of heat with roasted chilli or sprinkle with chilli flakes.
