Chilli and Lime Grilled Pineapple Skewers

Sweet, smoky, and spiked with zesty heat, these Skewers are an easy entrée cooked on the barbecue. Juicy pineapple chunks are marinated in a mix of fresh lime, chilli, and a touch of honey, then lightly charred to produce a delicious, caramelised flavour. Finished with a sprinkle of sea salt and fresh coriander, they’re the ultimate tropical starter for your summer spread.

What do I need?

  • Zest and juice of 2 limes, plus extra to serve
  • 2 tbsp olive oil
  • 1 red chilli, finely chopped, plus extra for garnish
  • 1 tbsp honey
  • Sea salt, to taste, plus extra to serve
  • ½ tsp ground cumin
  • 1 ripe pineapple, peeled, cored and cut into chunks
  • Coriander leaves, to serve

How do I make it?

  1. In a bowl, whisk together lime zest and juice, olive oil, chilli, honey, salt, and cumin.
  2. Add pineapple to the mixture and let sit for 15 minutes to marinate.
  3. Thread pineapple pieces onto skewers. 
  4. Heat barbecue grill to medium-high heat. Cook skewers for 2 – 3 minutes per side, or until lightly charred.
  5. Serve sprinkled with sea salt and garnished with coriander leaves, chilli and lime.
