
Chilli and Lime Grilled Pineapple Skewers

What do I need?
- Zest and juice of 2 limes, plus extra to serve
- 2 tbsp olive oil
- 1 red chilli, finely chopped, plus extra for garnish
- 1 tbsp honey
- Sea salt, to taste, plus extra to serve
- ½ tsp ground cumin
- 1 ripe pineapple, peeled, cored and cut into chunks
- Coriander leaves, to serve
How do I make it?
- In a bowl, whisk together lime zest and juice, olive oil, chilli, honey, salt, and cumin.
- Add pineapple to the mixture and let sit for 15 minutes to marinate.
- Thread pineapple pieces onto skewers.
- Heat barbecue grill to medium-high heat. Cook skewers for 2 – 3 minutes per side, or until lightly charred.
- Serve sprinkled with sea salt and garnished with coriander leaves, chilli and lime.
