Summer Berry Sherbert

Bright, fizzy and joyfully nostalgic, this Summer Berry Sherbert is inspired by classic Aussie sherbert flavours with a grown-up refreshing twist. Packed with berries and topped with a light froth, it’s a fun non-alcoholic treat that everyone can enjoy.

How long will it take?

10 minutes

What’s the serving size?

Serves 2

What do I need?

  • 250 g fresh or frozen mixed berries of your choice – strawberries, raspberries, blueberries
  • 2 tbsp caster sugar, to taste
  • 1 tbsp freshly squeezed lemon juice
  • 250 mL cold water
  • 500 mL chilled lemonade or sparkling water
  • Ice cubes, to serve
  • Fresh mint leaves, to garnish

How do I make it?

  1. Place mixed berries, caster sugar and lemon juice into a blender and blend until smooth.
  2. Add cold water and blend again briefly to loosen the mixture.
  3. Strain through a fine sieve into a jug, pressing down to extract as much liquid as possible.
  4. Fill two glasses with ice and divide the berry mixture between them.
  5. Top up with chilled lemonade or sparkling water — it will lightly foam like sherbet.
  6. Garnish with fresh mint and serve immediately.

TOP TIPS

·       For extra fizz and that classic sherbet feel, use very cold sparkling water or lemonade.

·       Adjust sweetness depending on how ripe your berries are — frozen berries often need a little extra sugar.

·       This makes a great party base: simply scale it up and let guests top their own glasses.

·       For an adult version, add 30 mL vodka, gin or prosecco per glass.
