Blue Coconut Margarita

Bright blue, lightly tropical, and perfectly chilled, this fun feel-good cocktail is the kind of drink you make when you want something festive. Ideal for celebrations, summer nights, or when you just feel like shaking things up.

How long will it take?

5 minutes

What’s the serving size?

Serves 2

What do I need?

  • Lime wedge, for rimming
  • 2 tbsp desiccated coconut or caster sugar, for rimming the glasses
  • Blue food colouring, optional
  • Ice cubes
  • 90 mL tequila
  • 60 mL blue curaçao
  • 60 mL coconut cream
  • 45 mL fresh lime juice

How do I make it?

  1. Run the lime wedge around the rim of two cocktail glasses. If you want a blue tinge to the rim, add a drop of blue food colouring to the coconut or sugar. Dip the rims into the coconut or sugar to coat lightly. Set aside.
  2. Fill a cocktail shaker with ice cubes. Add tequila, blue curaçao, coconut cream, and lime juice.
  3. Shake firmly for 15-20 seconds until the mixture is icy cold and well combined.
  4. Strain into the prepared glasses.

TOP TIPS

·       If you prefer a less sweet cocktail use coconut milk instead of coconut cream and add extra lime juice to balance.

·       Chill glasses to keep the drink colder for longer.
