Tropical Fruit Chia Puddings

These individual parfait-style cups layer creamy coconut chia pudding, tangy yogurt, crunchy granola, and juicy tropical fruits. Finished with coconut chips, they’re naturally sweetened, packed with nutrients, and bursting with flavour.

What do I need?

For the Chia Pudding Base

  • 1 cup unsweetened coconut milk
  • 1/3 cup chia seeds
  • 1 – 2 tbsp maple syrup or honey
  • ½ tsp vanilla extract

For the Yoghurt Layer

  • 1 cup plain Greek or coconut yoghurt

For the Toppings (per serving)

  • ¼ cup granola
  • ¼ to ½ fresh mango, pureed
  • ½ passion fruit
  • 1 tbsp coconut chips

How do I make it?

  1. Make the Chia Pudding Base by whisking together coconut milk, chia seeds, maple syrup or honey, and vanilla. Let sit for 5 minutes, then stir again. Cover and refrigerate for at least 2 hours, or overnight until thick.
  2. To serve spoon about ½ cup of the Chia Pudding into the base of each serving glass. Add ¼ cup yoghurt over the pudding.
  3. Sprinkle on a layer of granola. 
  4. Spoon on pureed mango and add passion fruit.
  5. Sprinkle with coconut chips and serve immediately.

TOP TIPS

  • The Chia Pudding and yoghurt base can be layered into glasses and kept sealed in the fridge for 3 – 5 days.
  • Add toppings when ready to serve to maintain their texture.
