
Strawberry & Banana Trifle
Layers of soft sponge cake, creamy vanilla custard, fresh strawberries and bananas, and a generous topping of whipped cream make the perfect crowd-pleasing dessert.

What do I need?
- 1 small sponge cake, cut into cubes (approx.300 g)
- 60 mL sherry
- 3 tbsp strawberry jam
- 500 mL vanilla custard
- 250 g fresh strawberries, sliced + 6 whole strawberries for garnish
- 2 bananas, sliced
- 250 mL whipped cream
- 25 g slivered almonds
How do I make it?
- In a trifle bowl, add a layer of sponge cake to the bottom.
- Drizzle lightly with sherry and dollop a little strawberry jam over the cubes of sponge cake.
- Pour a layer of custard over the top, then place sliced strawberries upright against the side of the bowl and fill the centre with the remaining strawberries.
- Add another layer of cake, followed by sherry, jam, and custard.
- Layer sliced bananas upright against the side of the bowl and fill the centre with the remaining slices of banana.
- Add a final layer of custard, then top with whipped cream. Garnish with whole strawberries and almonds and refrigerate for at least 2 hours before serving.
TOP TIPS
- Toss banana slices with a bit of lemon juice to slow browning.
- Swap in other fruits like raspberries or peaches if desired.
- To make a zero-alcohol version swap the sherry for apple juice.
- You can make your own custard if you prefer but we used store-bought custard to save time.
