
Rustic Mixed Berry Cobbler
With bubbling berries underneath and a golden topping, this Mixed Berry Cobbler will warm you from the inside out. Serve with custard, cream or ice cream for a delicious dessert.

What do I need?
- 500 g mixed berries, fresh or frozen
- 80 g caster sugar
- 1 tbsp cornflour
- 1 tsp vanilla extract
- Finely grated zest of ½ lemon
- 1 tbsp lemon juice
- For the topping
- 190 g plain flour
- 2 tsp baking powder
- 2 tbsp caster sugar
- Pinch of salt
- 90 g unsalted butter, cold and cubed
- 125 g milk
- 1 tsp vanilla extract
- 1 tbsp raw sugar, for sprinkling
How do I make it?
- Heat oven to 190C.
- Add berries to a medium bowl. Sprinkle over the caster sugar and cornflour, then add vanilla, lemon zest and lemon juice. Toss to combine.
- Spoon mixture into a medium ovenproof baking dish. Spread out evenly and set aside.
- In a large bowl, whisk together flour, baking powder, sugar and salt. Add cold butter and rub it in with your fingertips until the mixture resembles coarse breadcrumbs.
- Stir in the milk and vanilla extract just until a soft, slightly lumpy dough forms. Do not overmix.
- Using two spoons, drop rough dollops of the dough over the berries, leaving gaps so the fruit can bubble through.
- Sprinkle the topping with raw sugar. Bake for 40-45 minutes, or until the top is golden and the berry filling is bubbling around the edges.
- Remove from oven and rest for 10 minutes before serving.
TOP TIPS
- If using frozen berries, do not thaw them first – just add an extra 5 minutes to the baking time.
- For extra crunch, add a tablespoon of oats to the topping mixture.
- The dough should be rustic and uneven; that’s what gives the Cobbler its signature look and texture.
