Ruby Sunrise Verrines

These Verrines feature vibrant layers of summer stone fruit compote, berry purée, and a whisper of whipped cream. Finished with fresh raspberries and a glossy cherry, they’re as elegant as a pâtisserie showcase—but blissfully simple to make at home.

How long will it take?

1 hour

What’s the serving size?

Serves 8

What do I need?

For the Berry Layer

  • 2 cups raspberries
  • 2 tbsp caster sugar
  • 1 tsp lemon juice

For the Stone-Fruit Layer

  • 3 cups apricots or peaches, finely chopped
  • 2 tbsp honey or caster sugar
  • 1 tbsp water

For the Dark Fruit Layer

  • 1 ½ cups blackberries
  • 1-2 tbsp caster sugar

For the Whipped Cream

  • 1 cup thickened cream
  • 1 ½ tbsp icing sugar
  • 1 tsp vanilla extract

To serve

  • Fresh raspberries
  • 8 whole cherries

How do I make it?

  1. Combine raspberries, caster sugar and lemon juice in a small saucepan. Heat over medium heat for 3-4 minutes until the berries soften. Lightly mash berries with a fork and set aside to cool. Spoon evenly into the base of 8 small glasses.
  2. Add apricots/peaches, honey and water to a saucepan. Simmer gently over low heat until soft and jammy, about 7 minutes. Cool slightly and spoon half over the raspberry layer.
  3. Combine blackberries, sugar and a splash of water in a small saucepan. Cook over medium heat until the fruit breaks down and becomes glossy. Strain for a smooth finish if desired. Add to each glass.
  4. Spoon reserved half of the apricot/peach mixture over top of the blackberry layer.
  5. Beat cream, icing sugar and vanilla until soft peaks form. Pipe or spoon a small swirl onto each verrine.
  6. Arrange a ring of raspberries on the top of the verrines, and top each with a whole cherry. Refrigerate for at least 30 minutes before serving.

TOP TIPS

-        Chill the glasses to keep the layers sharp and well-defined.

-        You can substitute the whipped cream for Greek yoghurt if you prefer.

GOES WELL WITH

-        A dry or slightly sweet sparkling rose complements the bright berry flavours and mirrors the dessert’s colour palette.

-        For a zero-alcohol option choose a chilled sparkling raspberry mineral water.
