What do I need?
- 2 sheets puff pastry, about 25-centimetres x 25-centimetres, thawed
- 3 ripe peaches, thinly sliced
- 1 tsp lemon juice
- 1 egg, lightly beaten
- 1 tbsp milk
- 2 tbsp apricot jam, warmed
- 1 ½ tbsp raw sugar
How do I make it?
- Preheat oven to 200C.
- Line a baking tray with baking paper.
- Cut the puff pastry into 6 heart shapes and lay on the tray.
- Toss peach slices with lemon juice, then fan several slices onto each pastry, leaving a border.
- Mix egg and milk, then brush over the edges of the pastry.
- Brush warmed jam over the peaches.
- Sprinkle edges of pastry with sugar.
- Bake for 20-25 minutes, until puffed, golden and glossy.
- Cool slightly on a rack.
- Serve with vanilla ice cream, Greek yoghurt, or a dollop of cream.
