Golden Syrup Dumplings

A true comfort dessert, Golden Syrup Dumplings are soft, fluffy pillows of dough simmered in a rich syrup. Warm, sticky and nostalgic, they’re ideal for wintry evenings served straight from the pot with plenty of sauce.

What do I need?

For the Syrup

  • 2 cups water
  • 2/3 cup golden syrup
  • ¾ cup brown sugar
  • 50 g unsalted butter
  • 1 tsp vanilla extract

For the Dumplings

  • 1 ½ cups self-raising flour
  • Pinch of salt
  • 30 g butter, cold and cubed
  • ½ cup milk

To serve

  • Cream or vanilla ice cream

How do I make it?

  1. Combine water, golden syrup, brown sugar, and butter in a large saucepan.
  2. Stir over medium heat until the butter melts and the mixture is smooth. Bring to a gentle simmer, then stir in vanilla.
  3. Meanwhile, make the dumplings. In a bowl combine self-raising flour and salt. Rub in butter with your fingertips until the mixture resembles fine breadcrumbs.
  4. Add milk and mix to gently form a soft dough, but don’t overwork it.
  5. When the syrup is simmering, drop tablespoon-sized portions of dough into the syrup.
  6. Reduce heat to low, cover with a lid and simmer for 15-18 minutes. Avoid lifting the lid too often, as the steam helps the dumplings to cook.
  7. The dumplings are ready when they’re fluffy and cooked through.
  8. Spoon into bowls with plenty of syrup and serve with ice cream or cream.

TOP TIPS

  • Don’t overcrowd the pan – the dumplings will expand as they cook so leave room in the pan for them to grow.
  • Keep the lid on – steam is the key to soft, fluffy dumplings.
  •  Test doneness – insert a skewer into a dumpling; if it comes out clean, they’re ready.
